Gingerbread Pancakes with Orange Marmalade Syrup
(We usually serve this with a hearty sausage and fresh fruit) (Makes 15 pancakes)
2 Cups flour 1 tsp baking soda 1 tsp baking powder 1 Tbsp sugar 1-2 eggs depending on size and batter consistency 1 Tbsp cinnamon 1 ½ tsp ground ginger 1 ½ tsp ground allspice ½ tsp ground nutmeg ½ tsp ground cloves
Sift dry ingredients in large bowl. Mix wet ingredients in separate bowl, and then add to dry ingredients. Let batter rest overnight in refrigerate. Spray large hot nonstick fry pan with pam and drop batter in rounds. Cook until tops are covered with bubbles and edges look cooked. Turn to cook other side and serve with syrup.
Syrup
2/3 cup pure maple syrup 1/3 cup orange marmalade 1/3 cup cointreau (optional)
Combine all in saucepan and heat until fully mixed and hot. Serve hot.
